Easy Vegan Tomato Couscous
Israeli Couscous or pearl couscous is an exciting way to enjoy your
pasta. It is quick to prepare and can even made in advance to make your meal
prep even more easy. It can be enjoyed hot with a nice vegan pasta sauce or
cold to be a great add on in any easy vegan salad for lunch.
Makes 2 servings
Ingredients:
Fresh Ingredients:
1 big onion, diced
2-3 garlic cloves, diced
Fresh parsley, diced
Basics:
1 tbsp. olive oil
1 can of diced tomatoes
1 pack of Israeli couscous (250g)
Spices:
Himalayan Salt, pepper, paprika, ginger
How to do:

Prepare the couscous according to cooking instructions
on the package and set aside

Heat up the olive oil in a big pan, add the onions and
sauté till translucence
·
Add the garlic and cook for another 1-2 min or very
lightly brown
·
Add some salt, crushed pepper, paprika and ginger and
the full can of tomato
·
Mix and let simmer for about 5 min and add the
couscous, mix it well and serve with some fresh parsley on top
Tip:
This dish is perfect as a cold salad for next days work lunch. Simply add some green leafs like spinach or rocca, some beetroot, cucumber, avocado etc.
