Easy Vegan Bread

Makes 1 bread loaf
Ingredients:
Fresh Ingredients:
1 cup lukewarm filtered water
Basics:
1 tbsp. olive oil plus extra to grease
3 cups plain unbleached flour (not self raising!)
1 tbsp. dry yeast
¼ tsp. sugar of choice
Spices:
1 tsp. Himalayan salt
1 tbsp. Italian herbs
(Both optional)

How to do:

Mix together flour, yeast, sugar, salt and herbs in a
big glass bowl
·
Add olive oil and water and mix properly by hand till
it forms a big lump; take it out and kneed it little bit till it forms a ball
shape. If its too sticky in the beginning you may dust some flour on the
surface first

Place the ball back into to the bowl and cover the
bowl with cling film
·
Place the bowl in a warm place and let it rise till
double in size; this will take at least 30 min (view tip)
·
After the first rise is done, grease your bread mold
with olive oil and dust the surface of your working space with some flour. Take
out the dough and give it a good kneed, place it in the bread mold, add a
little bit of olive oil and even the dough in the mold, cover with your
previous foil and let rise in a warm place till its nearly the size you desire,
it will get a bit bigger during the baking process

After the second rise, remove the foil and place in
your hot oven at 200°C for about 20-30 min at upper and lower heat
·
The timing might vary depending on the oven, so best
is to watch the bread for the first few times to get the perfect timing for
your oven

You can also place the bread in the cold oven and make
already use of the heating up time; the yeast will eventually stop working once
the bread reaches 50°C, when using this method your baking timings might get
shorter
·
Your bread should have a nice golden brown color on
top and sound hollow when “knocking” at the backside
·
After you took the bread out of the oven, remove it
from the bread mold as soon as you can handle it, because if the bread stays
longer in the mold it will get soft on the outside and will not be so crunchy
anymore; use oven gloves or a tea towel
Tip:
Give the first rise 4-8 hours to break down the gluten to become better digestible.
Prepare the dough in the morning before work or in the evening before going to
bed, so it gets a great rest and then continue with the second rise
Step by step:
Mix all the dry ingredients and the then add olive oil and water
Mix it, kneed it and form a bowl, if your dough is too soft, reduce the water a little bit at the next time
Cover it and let it rise
Now its time to kneed it again and place in the oil greased bread mold
Use a bit of olive oil in order to form the dough into the molds shape, cover it and let it rise
You can sprinkle some extra herbs on top and now its time to bake
The bread will seem very hard on top but will soften up after a while. Take the bread out of the mold, flip it and knock on the backside, you should hear a hollow sound. It can be still baked trough, even without the sound, but then its usually already softer.
Enjoy your freshly baked bread, wrap it in some cling film to keep it fresh!
