Easy Vegan Gluten Free Breakfast Ideas


After last week’s Easy Vegan Breakfast Ideas I am sharing now a gluten free version.


If you try to stay away from gluten, this is for you. These are great Coeliac Disease breakfast options as well suitable for keto and paleo followers as the potatoes can be easily exchanged with sweet potatoes.

It is very easy to enjoy a vegan, cruelty free, gluten free and absolutely satisfying breakfast and today I show you how.

Garlic Broccoli with Avocado

Ingredients:

Fresh Ingredients:
2 cups of broccoli
Half avocado
Easy Vegan Sauerkraut

Basics:
Olive oil (cold pressed is best)
 2-3 garlic cloves, diced (not from china)

Spices:
Black pepper
Himalayan salt
Smoked paprika


How to do:

·         Cut the broccoli into small heads and pieces

·         Heat up some water in a frying pan/ steamer and steam the broccoli just before tender
·         Heat up some olive oil in a frying pan and stir fry the broccoli till it starts to brown
·         Add diced garlic to the pan and continue stir frying till garlic starts to turn lightly brown
·         Add the sprouts to the pan and continue to stir fry and turn
·         Once the garlic has desired gold brown colour switch of the heat
·         Season with salt and pepper and place on a plate
·         Slice half avocado and add to the plate and season with some smoked paprika
·         Add a good amount of Sauerkraut as well

Potatoes with Hummus


Ingredients:


Fresh Ingredients:
2 cups of medium cubed potatoes
Hummus

Basics:
Olive oil (cold pressed is best)

Spices:
Black pepper
Himalayan Salt
Smoked paprika


How to do:

·         Cut your potatoes into medium equally sized cubes
·         Heat up a frying pan with some olive oil and fry the potato cubes from all sides till golden brown
·         Season with salt, pepper and smoked paprika, mix it and switch of the heat
·         Place on plate and hop with hummus
·         Garnish with plenty of Sauerkraut

Smashed Avocado on Sweet potato

Ingredients:

Fresh Ingredients:
A 1, 5 cm thick slice of sweet potato
½ avocado

Basics:
Olive oil (cold pressed is best)

Spices:
Black pepper
Himalayan salt




How to do:

·        Peel a big sweet potato and cut it into approximately 1,5 cm this slices
·         Heat up some water in a frying pan/ steamer and steam the slice of sweet potato for about 10 min or till softened on the outside
·         Heat up some olive oil in a frying pan and fry the sweet potato slice for about 3 minutes on each side or till browns slightly on the outsides and be easily peaked with a fork
·         Mash half avocado and spread it on the slice of sweet potato
·         Top it with fresh easy vegan lentil sprouts
·         Season with salt and pepper
·         Slice half avocado and add to the plate and season with some smoked paprika
·         Add a good amount of Sauerkraut as well and

Tip:

The quantities are just a guideline and can be varied depending on the number of people and hunger felt. As all of the ingredients are wholefoods there is no restriction needed and don’t be afraid of eating bigger quantities than usual, as consuming just vegetables requires defiantly a higher amount in order to get the calories needed to start the day!
