Easy Vegan Guacamole


Holy Guacamole!

Isn’t guacamole simply the best food on this planet? Avocados are fruits, well yes! But compared to most fruits they are low in carbs and high in fat which makes them the perfect partner in crime when on a keto or paleo diet. Apart from that they are high in vitamins, fiber, potassium and are loaded with monounsaturated fatty acids, so that means eating these little green buddies will help you to feel more satisfied after a meal and keep you full for a longer period of time. Adding now antioxidant and vitamin rich tomatoes and onions makes guacamole definitely a winner!

If you are staying away from gluten or have Coeliac Disease this snack will cheer you up as it’s the perfect go to when wanting to have something quick and satisfying. It is definitely a vegan super food which taste simply amazing.

Easy Vegan Guacamole

Fresh Ingredients:
2 ripe avocados
½ lime, juice
1 tomato

Basics:
½ onion, diced

Spices:
Black pepper
Himalayan salt
Fresh coriander (optional)
½ chilly pot (optional)



How to do:

·         Cut the ripe avocados into halves, remove the seeds and peel off the skin, cut into pieces and mash in a lange glass bowl

·         Dice the onion into small cubes and add to the avocado
·         Add the juice of half a lime to the mixture and mix well
·         Cut the tomato into halves, remove the liquid parts and seeds and cut into small cube, add to the mixture
·         Optional: remove the seeds of a chilly, dice and add it to the mix
·         Optional: wash some fresh coriander, chop and add to the mix
·         Season with cracked pepper and salt if needed
·         Mix well and serve in a fresh bowl with corn chips








Tip:


If you are eating your guacamole with corn chips the traditional way, check first how salty your chips are and taste them with your unsalted guacamole to check if you need to add any salt at all, the less salt the better!
