Easy Vegan Chipotle Mushroom Salad
This is my new favourite low carb salad!
It’s very quick to prepare and make the perfect take away salad for
work. As its gluten free and full of healthy fats it’s a brain charger and
helps your body to recover and stay focused. Spinach is full of iron, calcium
and magnesium and mushrooms are very low in calories and high in fiber and
protein which makes them the best lunch option!
This amazing salad is easy, vegan, gluten free, low carb and super
delicious!

Easy Vegan Chipotle Mushroom
Salad

Fresh Ingredients:
300g mushrooms (ca. 5 cups when quartered)
1 ripe avocado, sliced
Fresh parsley
Basics:
1 medium onion, sliced (1/2 cup)
1-2 garlic cloves, diced (1Tbsp)
1 tbsp. vegan chipotle sauce
1tsp. Olive Oil for the salad and 2-3 Tbsp. for the mushrooms
1 tsp. Balsamic vinegar
Spices:
Black pepper
Himalayan salt
Dried chilly
How to do:

Wash the mushrooms and cut them into quarters
· Heat up a big pan with 1 tbsp. olive oil, add the mushrooms and try them up
· Add sliced onions and continue to fry
· Add diced garlic and continue to fry till garlic gets golden brown
· Reduce the heat, add the chipotle sauce and give it a good stir, switch off the heat
· Toss the washed baby spinach with olive oil, balsamic vinegar, salt and cracked pepper and arrange it in a serving dish
· Add a full sliced avocado and add the fried chipotle mushrooms
· Garnish with some fresh parsley and sprinkle some cracked pepper and dried chili flakes on top of the avocados

Tip:
Fresh baby spinach is a great choice for a take away work lunch as its
staying fresh for a longer time even when tossed in salad dressing. Rocca salad
is even stronger and makes a great option as well and gives you options to
prepare your own lunches at home to stay healthy during your work lunch. Having
prepare meals is a great way to save some money as well and will release you
from the headache to find a quick bite during your 30-60 min lunch break so you
can dive into the second half of your working day fully relaxed and recharged!
Chipotle Mushroom cooking steps:
Heat up some olive oil and add the mushrooms
Once they released all their liquid fry them up with some extra oil and
add the onions. Once these are starting to brown add the garlic till it turns
gold brown as well
Reduce the heat and toss everything in the chipotle sauce
Extra Tip:
The chipotle sauce is the only high carb product in this salad, so when
buying the sauce check the ingredients to make sure its vegan and to choose the
one with the lowest carb content. Adding 1 tbsp. is more than enough to get a
great and exciting smoky taste to your dish but you can always reduce it to ½
tbsp. You can also use bbq sauce as alternative. Check in your local organic
store for more healthy options.
