Easy Vegan Broccoli Fritters (gluten free, oil free, high protein)

Another week another party snack! Easy Vegan Broccoli Fritters are a
great and healthy alternative to crackers and chips at any party! As they are
oil free and unprocessed they are a welcomed swop for the waistline and provide
valuable nutrition such as protein and iron.
They are quick and easy to prepare and don’t need any fancy or costly ingredients!
No expensive “gluten free flour” is needed rather simple chickpeas flour will
do the magic. Chickpea flour has 58g carbohydrates per 100g compared to 76g in
normal white flour. “Gluten free flour” is mostly very high in carbs and
processed starches as well, that’s why I actually never use it and rather
prefer a more natural kind of alternative. And with whooping 22g of plant based
protein per 100g you are having your answer ready when the next person asks you
where you are getting your protein from ;-)
Chickpea flour is also known as Gram flour or Besan flour or maybe even Chana
flour. It’s all the same. Chickpea flour is very popular and commonly used in
India and in order to get your best value go to an Indian shop, I am getting
mine for AUD $3, 50 per 1kg bag. I saw it also as organic lose item at my favourite
health store for AUD $10 per kg, so it’s defiantly worth shopping at an Indian
store. If you are living in the UAE you should find it at most supermarkets
like Lulu, Carrefour, Aswag etc.

Makes around 28pcs (small):
Fresh Ingredients:
2 cups fresh broccoli, shredded
Basics:
1 cup chickpea flour (besan/gram flour)
¾ cup soy milk
1 onion, cut (1/2 cup)
Spices:
¼ Tsp. black pepper
¼ Tsp. Himalayan salt (¼ Tsp. extra if you like it more salty)
How to do:

Mix the chickpea flour and soy milk together in a big
bowl and whisk until it becomes a batter
· Place the broccoli, onion, salt and pepper in a food processor/ blender and shred into small pieces
· Heat up a frying pan and fry the broccoli mixture for 5 minutes on medium heat, there is no need to add oil to keep it oil free
· Add the broccoli mix to the batter and whisk till evenly mixed
· Heat up a frying pan on medium heat, don’t use oil, and once its hot use a tablespoon to spoon in the batter and even it out into small fritter, it looks similar to a mini pancake
· Keep it like this for 2/3 minutes or until its easy to remove with a spatula
· Keep it for another 2-3 minutes on the other side
· Serve with a delicious vegan dip

Tip:
For this recipes it is perfectly fine to use the stem of the broccoli,
as it is shredded anyways and a good way to recipe it. You can also mix in some
cauliflower!
Extra Tip:
You can also make bigger fritters and use them as wraps!
