Easy Vegan Stuffed Mushrooms (gluten free, oil free, party food)

As last week’s recipe Easy Vegan Lentil Pockets was so popular I decided to share more easy vegan party snacks with you over the coming weeks! When hosting a family gathering or going to a garden party its great to have some easy vegan recipes at hand which don’t require too many ingredients nor time. It is especially great to be able to surprise everyone with delicious vegan treats everybody will enjoy.

Easy Vegan Stuffed Mushrooms are a perfect low carb snack in the evening as well instead of nuts or veggie sticks. And if you love Indian food they can be a great add on to mushroom cum masala.

This quick and handy recipe is:

Gluten free
Easy and fast to prepare
High in protein
High in iron
High in magnesium

Makes 18-20pcs:

Fresh Ingredients:
Ca. 20 small button mushrooms (depends on size)

½ cup cashews
1 Tbsp. chopped garlic
3 Tbsp. nutritional yeast
4 Tbsp. soy milk (or alternative)

½ Tsp. black pepper
1/2 Tsp. Himalayan salt

How to do:

·         Soak the cashews for around 2h and remove the water
·         Add all ingredients except the mushrooms into a food processor (blender, mixer or whatever you have) and blend till it becomes a hummus like mixture, use a spatula to scrap down the sides to make sure everything is blended together
·         Remove the stems from the mushrooms and use a spatula to till the mushrooms with the mixture
·         Place stuffed mushrooms on a baking tray lined with baking paper and back in your preheated oven for 15 min on 160°C upper lower heat or until golden brown
·         serve

You can prepare the stuffed mushrooms in advance and bake them just before serving or you bake them in advance and serve them cold, both are a delicious option.

Extra Tip:
Try to get small mushrooms so your filling will give you more servings.
