It is time for a new Easy Vegan party snack. Easy Vegan Zucchini Fries are a delicious light treat which are a low cab and low calorie alternative to regular snacks. The good thing is you can prepare them in advance and just pop them into the oven just before serving. This treat will be a highlight at every garden party.
Easy Vegan Zucchini Fries are also a great snack for the evening instead of chips or nuts. You can also deep fry them but I tested it and they surprisingly taste much better oven baked which is definitely a big plus for the waist line. You can also serve them to your kids as a small pick me up after school, a healthy snack they will enjoy.

Makes 40-60 zucchini fries:

Fresh Ingredients:
2 big zucchini or courgettes

Basics:
1 cup almond flour
½ cup soy milk (or alternative)
2 Tbsp. nutritional yeast

Spices:
½ Tsp. black pepper
½ Tsp. Himalayan salt
1 Tsp. garlic power (avoid garlic powder from China)



How to do:


·         Preheat the oven 160- 180°C upper and lower heat and place a sheet pf baking paper onto a backing sheet

·         Wash the zucchini and cut them into fries shape sticks

·         Mix all dry ingredients together in a bowl
·         Pour soy milk into a bowl
·         Dip each zucchini stick into the soy milk so it is wet from all sides
·         Then coat the sticks with the dry mix from all sides and place on the baking sheet
·         Bake for 20-25 min. or until golden brown, in my oven I don’t have to turn them as they brown equally from all sides, yours may be different
·         Serve with Easy Vegan Cheesy Sauce






Tip:
You can also use green asparagus instead of zucchini. They make great veggie fries as well.



Step by step:


Cut the zucchini into sticks



Gluten free “bread” crumbs



Coat the zucchini sticks first with soy milk and the with the gluten free crumbs




Place them on a baking tray



Bake them



Close up





Extra Tip:
They will get soft after a while, so if you want to serve them at a party, cut the sticks shorter to make it easier to dip them.
